Bombay Chicken n’ Rice [relatively (relative to an Indian restaurant) quick and cheap]

I’ve written this so that there are no ingredients left over from the boxes. It’ll serve 3-4 people.

What You Need:

  1. 10 oz of chicken breast
  2. 6 ox box curry rice pilaf mix (I like the brand ‘Near East’)
  3. tomatoes, diced
  4. peas
  5. Cashews

What You Do:

  1. Prepare rice according to package.
  2. After 15 minutes of simmering, stir in the chicken, tomatoes, and peas.
  3. Simmer for another 10-15 minutes – rice will be tender and the liquid mostly absorbed.
  4. Top with cashews
