I’ve written this so that there are no ingredients left over from the boxes. It’ll serve 3-4 people.
What You Need:
- 10 oz of chicken breast
- 6 ox box curry rice pilaf mix (I like the brand ‘Near East’)
- tomatoes, diced
What You Do:
- Prepare rice according to package.
- After 15 minutes of simmering, stir in the chicken, tomatoes, and peas.
- Simmer for another 10-15 minutes – rice will be tender and the liquid mostly absorbed.
- Top with cashews
