Creamy Corn Vegetable Soup

What You Need:

  1. 3 Corn Cobs
  2. Chopped Carrots
  3. Chopped Bell Pepper
  4. Chopped Onions (white or red) or Scallions
  5. Milk
  6. Salt
  7. Pepper
  8. Cayenne Pepper
  9. Cilantro
  10. Butter

What You Do:

  1. Steam or boil fresh corn cobs till the kernels are tender
  2. Scrape off the corn kernels with a knife
  3. Grind the kernels in a grinder or mixer, add salt
  4. Add milk and puree. Add only enough milk to create a thick corn-paste
  5. Melt butter in a pot
  6. Add finely chopped veggies and saute for ~3 minutes
  7. Add salt, pepper, and cayenne pepper
  8. Add the corn puree and saute and stir for ~3 minutes
  9. Add 1/2 cup milk
  10. Add 1 cup water
  11. Whisk the soup over low heat. Do not let boil!
  12. Stir in salt, pepper, cayenne pepper, and cilantro
