Creamy Mushroom and Cheese Polenta

What You Need:

  1. 1 cup polenta
  2. 4 cups water
  3. 1 container sliced mushrooms, washed and diced
  4. 1/2 cup diced onion
  5. 1/2 cup grated Parmesan cheese
  6. 3 tbsp butter
  7. 1 tsp Cajun salt
  8. pepper to taste
  9. 2 tsp olive oil or nonstick spray
  10. parsely

What You Do:

  1. In a separate skillet, spray with nonstick oil or add a small bit of oil to begin sauteing the mushrooms with pepper to taste.
  2. When mushrooms begin to brown, in a separate pot bring water and salt to a boil.
  3. Set mushrooms aside.
  4. Pour polenta slowly into the boiling water. Keep whisking polenta in and keep heat high until no lumps remain.
  5. Reduce heat to low and continue to stir polenta for 5 minutes. Polenta will start to thicken.
  6. Cover pot and let simmer for 25 minutes. Stop to whisk every 5 minutes.
  7. Remove cover, add mushrooms in, and continue to stir.
  8. Add in butter (sliced) and let butter partially melt.
  9. Add in cheese and stir butter and cheese in.
  10. Cover and let simmer for 5 minutes on low heat.
  11. Uncover and garnish with parsley.
