Edamame Hummus

What You Need:

  1. 1 package frozen edamame (12 oz)
  2. 1/2 cup water
  3. 4 tablespoons extra-virgin olive oil
  4. 1/4 cup lemon juice
  5. 1/2 cup tahini
  6. 4 cloves garlic
  7. 1/2 cup packed cilantro leaves
  8. 1 teaspoon kosher salt
  9. 1 teaspoon ground cumin
  10. 2 teaspoons cayenne pepper

What You Do:

  1. Place edamame in a pot and fill with salted water.
  2. Place over medium-low heat, bring to a simmer, and cook until tender (~5 Minutes)
  3. Drain edamame
  4. Puree everything in a food processor until smooth.
