Gourmet Stuffed Bell Peppers

What You Need:

  1. Plenty of Red, Orange, Yellow, and Green Bell Peppers
  2. 1 lb Ground Beef
  3. 1 Cup Toasted Quinoa
  4. 1 Large White Onion, Finely Diced
  5. Olive Oil
  6. Salt
  7. Pepper
  8. Oregeno
  9. 3 Large Tomatoes, Finely Diced
  10. 3 Cans Tomato Sauce
  11. 2 Cups Water

What You Do:

  1. Preheat oven to 350 F
  2. Cut Bell Peppers in half and some to put in stuffed mixture – only about 1 Cup Diced and as many as you’d like halved with seeds and membrane removed.
  3. Bring 2 cups water to boil and add in toasted quinoa. Let cook ~15 min or until water is absorbed.
  4. In a separate large frying pan, lightly sautee the onion, tomatoes, and diced bell peppers in olive oil.
  5. In a separate pan, brown the beef and drain any juices. Add beef and tomato sauce to veggie mix and salt, pepper, and oregeno to taste.
  6. Put stuffing into peppers.
  7. In baking pan, set the peppers and coat the pan with some tomato sauce as well.
  8. Bake uncovered for 30 min and let cool for 10 min before serving!
