Ham and Potato Soup

What You Need:

  1. 4 potatoes, diced (I prefer to keep peels on, it’s got fiber!)
  2. 1 cup diced ham
  3. 1/2 cup diced celery
  4. 1/2 cup diced onion
  5. 1/2 cup diced carrots
  6. 6 tbsp flour
  7. 3 1/2 cups water
  8. 2 tbsp chicken bouillon granules
  9. 3 cups milk
  10. 4 tbsp butter
  11. salt, pepper, and oregano to taste

What You Do:

  1. Combine potatoes, celery, carrots, onion, ham, and water in a large pot
  2. Bring water to a boil, then lower the heat to medium and cook until potatoes are soft (~15 min)
  3. Add the chicken bouillon, salt, pepper, oregano, and stir
  4. In a separate pan, melt the butter and whisk in the flour
  5. Add milk into the pan over lower heat, and continue to mix it until thick
  6. Add the thickened milk into the pot with the soup
  7. Continue cooking over low heat for another 10 min
  8. Eat and stay warm!
