Healthy Cauliflower Cheese Breadsticks

What You Need:

  1. 3 Cups Cauliflower Rice
  2. 1 Tbsp Whole Wheat Pasty Flour (or take this out and use 2 Cups Cauliflower Rice instead)
  3. 1/4 Cup Egg Whites
  4. 1/4 Cup Fat Free Ricotta Cheese
  5. 1/2 Fat Free Shredded Mozzarella Cheese
  6. Garlic to Taste
  7. Pepper to Taste
  8. Salt to Taste
  9. Parchment Paper or Pan with Cooking Spray
  10. Optional: Marinara Sauce for Dipping

What You Do:

  1. Preheat oven to 425 F
  2. In a large bowl, mix cauliflower rice, pastry flour, egg whites, salt, pepper, garlic, and ricotta cheese. Mix well.
  3. Flatted “dough” out onto parchment paper.
  4. Bake for about 20 min.
  5. Take “bread” out and sprinkle mozzarella cheese on it.
  6. Bake for another 5 min or until cheese is as brown as you like.
  7. Eat w/ or w/o marinara sauce, but do eat knowing sticks are roughly only 40 to 60 calories a stick. :)
