Quick, Fancy Tomato Sauce (can be vegetarian)

This is in conjunction for the fancy baked ziti (which is not so fast to cook…but it IS really, really, really, and I mean really, yummy).

What You Need:

  1. 2 tablespoons extra-virgin olive oil
  2. 1 pound sweet and or spicy Italian sausages, casing removed and crumbled (skip this and make the whole process quicker and vegetarian)
  3. 1/4 medium onion, diced (about 3 tablespoons)
  4. 3 cloves garlic, chopped (this seems to be other people’s preference, I happen to like a stronger garlic flavor, so I put in like, 5 cloves.)
  5. 3 1/2 cups whole, peeled, canned tomatoes in puree, (one 28-ounce can), roughly chopped
  6. Sprig fresh thyme
  7. Sprig fresh basil
  8. 2 teaspoons kosher/sea salt
  9. ground black pepper (fresh kind is way better)

What You Do:

  1. Heat the oil in a medium saucepan over medium-high heat
  2. Cook the sausage until beginning to brown – about 3 minutes
  3. Add the onion and garlic, stirring, until lightly browned – about 3 minutes more
  4. Add the tomatoes and the herb sprigs and bring to a boil
  5. Lower the heat and simmer, covered, for 10 minutes
  6. Remove and discard the herb sprigs (yes, really)
  7. Stir in the salt and season with pepper, to taste
  8. This is good for now or up to 3 days in fridge or 3 months in freezer. But, it’s so yummy, I suggest using it now. :)
